Chocolate Evil

One trip out of town and I have fallen behind on a lot of things. A pile of mail, going to the gym, trying to catch up on sleep... it's a vicious cycle that I hope will end soon.

A few days ago, I made a special dessert for a party honoring my dear friend Kalani Queypo. We were celebrating his guest appearance on Nurse Jackie which is one of my favorite shows right now. Who doesn't love Edie Falco?!! This treat is super easy to make and has so much chocolate goodness, it will make you swoon! Plus the addition of almonds fools you into thinking "this can't be bad for you right? it has nuts in it!".

CHOCOLATE ALMOND RICE KRISPIE TREATS
Adapted from a "What's Gaby Cooking?" Recipe


INGREDIENTS
4 + 1/2 Tablespoon unsalted butter, divided
1/3 cup chopped raw almonds
1/4 cup cocoa powder
1 package of marshmallows
5 cups of rice krispies cereal
2/3 cup mini chocolate chips

DIRECTIONS
1. Spray an 8' square metal baking pan with cooking spray. Make sure the whole pan is coated with oil.
2. In a small saucepan, melt the 1/2 Tablespoon of butter over medium hight heat. Then add the chopped almonds and stir the nuts until they are browned. This should only take a couple of minutes. Take off the heat when done and keep it aside for now.
3. In a large skillet, melt the 4 Tablespoon of butter over medium high heat. Add the marshmallows and cocoa powder and stir until smooth.
4. Remove skillet from heat and add the rice krispies, almonds and 1/3 cup of the chocolate chips. Use a spatula to incorporate the mixture.
5. Transfer the mixture into the baking pan and spread out evenly. Sprinkle with the remaining chocolate chips. Let set for about 15 minutes until cool, then cut into squares and serve!!
