Grilled Tofu with Chimichurri on Grilled Bread

What makes a great tasting dish? It's all about the marinade! If you let your food bathe in a good sauce for at least 15 minutes it will enhance the flavor of the dish. If you have time to let it sit for an hour, that's a winner! You have to try this Chimichurri Tofu dish, it has so much flavor and it's very easy to make. I always serve it up with a salad dressed with just some lemon juice, touch of olive oil and a dash of salt & pepper... it's so light and refreshing!


GRILLED TOFU WITH CHIMICHURRI ON GRILLED BREAD

INGREDIENTS
15 oz Firm Tofu
4 slices of whole grain bread 
1/2 cup chopped red onion
1/2 cup chopped flat leaf parsley
1/3 cup olive oil
1/4 cup red wine vinegar
2 Tablespoons chopped oregano
1 Tablespoon minced garlic
2 teaspoons salt
1/2 teaspoon crushed red pepper flakes
ground black pepper to taste

DIRECTIONS
1. Cut tofu into 4 pieces. Press tofu dry with a paper towel for about 10 minutes.
2. Make the chimichurri. Put red onion through ground black pepper into a blender and pulse until finely chopped.
3. Reserve 1/2 cup. Marinate the tofu in remaining chimichurri, basting occasionally, for 1 hour.


4. You can make the salad while the tofu is marinating.
5. Heat a grill pan to medium. Lightly brush bread on both sides with marinade.
6. Grill until crisp, about 2 minutes per side.
7. Grill tofu until lightly charred, about 4 minutes per side.
8. Serve grilled tofu on bread with salad on the side.

Trust me you will be addicted to this chimichurri sauce!
