Well Hello There Dolly!

I'm normally not a sweets kinda gal but every now and then, I cannot resist a sugary treat :). This delectable recipe is a very easy one and something I whipped up for a friend's party recently. I love the idea of a bar with coconut and pecans in it so why not give it a shot? When I brought this dish over it was still warm from the oven and you could smell the butterscotch/chocolate flavors in the air, it was so intense! Once we dug in post dinner, it was well worth the wait. All the delicious layers just melted in my mouth, a beautiful symphony of crunchy goodness and rich flavors all in one bite.

HELLO DOLLY BARS - because you will say hello to her after the first bite :)
Adapted from a Smitten Kitchen recipe

INGREDIENTS
1/2 cup (1 stick) unsalted butter, cut into large pieces
1 1/2 cups graham cracker crumbs (about 8 graham crackers pulsed into a food processor)
1 cup butterscotch chips
1 1/2 cups chocolate chips
1 cup shredded coconut
1 cup pecans, coarsely chopped
1/2 cup sweetened condensed milk

DIRECTIONS
1. Preheat oven to 350 degrees.
2. Melt butter in a heatproof bowl in the microwave until just melted. Add graham cracker crumbs. Mix all together and press evenly into a 8x8" baking pan.
3. Layer coconut, pecans, butterscotch and chocolate chips on top of the graham cracker base. Pour sweetened condensed milk over the whole mixture.

4. Bake in oven for about 25 - 30 minutes or until the top is light brown.

You can wait for it to cool as it will be easier to cut into squares but something tells me you won't be able to wait once you are hit with the intense aroma from the oven :)! Please note this is a really sugary treat so I suggest cutting them into small squares for everyone. Get ready for some layered love!
